This usually makes enough dressing for two steak salads.
1/2 C blue cheese, divided into halves Cambazola Blue Cheese (8 ounce)
1/8 C onion, minced
1/2 C plain yogurt
1/4 C mayo (low fat if preferred)
1-3 Tbsp of half and half, depending on how thick you like your dressing.
Grab your immersion blender and container – Mix half of the blue cheese with the rest of the ingredients starting with just one Tbsp of the half and half at a time until you reach your preferred thickness.
Allow this to refrigerate while the salad and steak come together. It will thicken a bit more in the fridge. Taste before serving, add salt and pepper if desired. A few drops of water or half and half to thin if needed.
Sprinkle the other half of the blue cheese over the steak and salad just before serving.
