Bruschetta – Think of it as “Baguette Toast”. The tomato spread is a wonderful treat when the tomatoes and fresh herbs are on in the summer garden. Great picnic recipe.
Ingredients:
6 large, firm tomatoes – de-seeded and diced
2-3 large cloves of garlic, minced
1/2 C fresh, sweet or piccolo basil, chopped
1/4 C parsley, chopped
1 tsp fresh oregano, minced
big dash of crush red pepper flakes
1 tbsp fresh lemon juice
1 tbsp virgin or extra virgin olive oil
To assemble – Couldn’t be easier – mix the ingredients in a bowl and allow to rest for at least 30 minutes at room temperature before serving. Stir occasionally while resting. While the dip is resting, prepare the bruschetta or crostini. Take a baguette, slice, rub with a garlic clove and toast. Any fresh crusty loaf can make brushetta.
The bruschetta and dip make a wonderful center piece for a appetizer tray. Place the bowl in the middle of your platter and fill with the tomato mix. Stack the bread slices around. Nice additions to this are fresh mozzarella, olives. Sprinkle with chopped parsley and serve for a refreshing appetizer.
