Here’s a couple of simple salads featuring fresh carrots:

Carrots – Mediterranean Style
1/2 lb carrots – peeled and grated
2 Tbsp Olive Oil
2 Tbsp fresh lemon juice
1 garlic clove, crushed
1 Tbsp fresh mint, chopped
1/4 tsp kosher salt or sea salt
Prepare carrots and set aside. Combine all remaining ingredients and pour over carrots – mix to coat. Good refrigerated or at room temperature. Use baby or sweet spring carrots for best results.
Carrot Raisin Salad – Two dressings to choose from.
3 shredded carrots
1/2 C raisins
Dressing#1: Mix 1.5 Tbsp each plain yogurt and mayo, touch of honey.
Dressing#2: Mix 2 Tbsp mayo with 1-2 Tbsp of rice vinegar, equal dashes of sugar and salt. Mix well and toss with raisin carrot mix.
