An Old Standy – If you know of anyone who’s been in the military – they probably know this dish by “SOS” ……..I’ll let them explain
Ingredients
1 – 2.25oz jar of Dried Beef (in the canned meats section)
1/4 yellow onion, chopped (optional)
3 Tbsp of butter/oleo
2.5 Tbsp flour
1.25 C of Milk
1/8 Tsp white pepper
dash of garlic powder
Toast or Potatoes to smother
To Assemble: Open the jar of dried beef, cut the beef slices in half, then each half into three. Put the cut beef into a 10″ skillet, pour about a cup of water over and bring to a simmer, drain. This process eliminates most of the salt and preservatives. Add the onion and butter, cook until the onion is soft. Add the flour in and stir well; let this clump up on the beef pieces and cook for three minutes. This allows the pasty taste of the flour to dissolve. Add the milk, spices and stir well. Bring back to simmer – it will thicken considerably. Thin with additional milk if needed.

This is delicious over biscuits, toast, or potatoes. Cook up a couple of eggs to accompany the SOS and you have a savory breakfast or brunch.
