This super simple salad is the perfect offset to something hot or spicy. Goes really well with Thai curry. Gives that sweet offset to the spicy or hot dish. Most times you can come up with this as long as you have an apple and a carrot on hand!

Dressing -
2 Tbsp honey
Juice of one lime
1/4 tsp of lime zest (*optional)
Sesame or poppy seeds (*optional)
Mint for garnish (*optional)
Put the honey in a small microwaveable bowl and heat at low power just until it thins. About 20 seconds on power level 4 should do it. Slowly whisk in the lime juice until it is well blended. Taste – should be sweet and tart. Add the lime zest if preferred. This will cover a small bowl of fruit – recipe will double. Most of the dressing absorbs into the fruit.
Fruit that does well in this is as varied as you can imagine. Pick from:
Pineapple, Apple, Asian Pear, Mango, Melon, Berries (strawberries and blueberries especially) Star fruit, Grapes, Pears, Banana, Mandarin orange segments and raisins all do well.
Pare your fruit of choice and mix with julienne carrots or jicama. Pour the dressing over and toss – chill for at least 30 minutes to allow flavors to develop. Place in serving bowl(s) and top with seed of choice.
Note#1 – Some folks prefer just a bit of coconut milk in the dressing.
Note#2 – This salad can be sweetened up by topping with shredded coconut instead of seed choices.
