Ready to add Cucumbers to the Salad
Jicama, thin slices
pear, thin slices
carrot – cut into matchsticks
cucumber, small cubes,
toppings – choose from chopped cilantro, poppy seeds and/or shredded coconut
Dressing: mix 1 Tbsp of (softened) honey and juice from half a lime. Season with a dash of rice wine. Toss with salad ingredients. Refrigerate for 20 minutes or while the curry comes together. Dress with topping(s) of choice and serve.
