If you are like most super busy folk, just trying to add a bit of nutrition to your meal – this quickie “add to” is a great recipe to remember – just have a box of no-name stuffing in your pantry – you’ll probably have an onion and a stalk of celery on hand, 2 minutes of chopping, 10 minutes of microwave time and you have stuffing on the table!

Take one box of pre-made cornbread stuffing
Grab a 1.5 qt microwave dish with cover
Chop 1/3 to 1/2 Cup of onion (depending on your groups preference – any type of onion will do)
Fine dice 1/3 to 1/2 Cup of celery (including tops)
Place the recommended amount of butter or margarine in the microwave dish, add the chopped onion and celery – cook on high, covered for 2 minutes. Add the box stuffing/spices to the onion celery mix. Pour in the recommended amount of water or broth (again the amount from the box). Mix slightly, cover and microwave, covered for 6 minutes on high. Allow to rest for 1-2 minutes, then open and fluff with fork. The flavor and texture is enhanced by the fresh veggie add – you’ll get great comments. If you have a 1/3 C of sliced mushrooms or water chestnuts around – they add a nice perk to this stuffing, too.
This is great on the side of pork chop or ham slice dinner – try a waldorf salad, or applesauce as compliment. If you are serving stuffing off the side of a chicken (whole or chicken dish) use the same recipe, but add a pinch of chicken bullion in the water before cooking. Chicken, stuffing and fruit salad make a great wholesome meal as another idea.
