Open Faced Breakfast Savories

This is my favorite “pre-ski” breakfast!
For Two:
Hard Boil 3 jumbo or 4 regular eggs – plunge into cold water and peel when they can be handled
1/4 C of finely diced celery and onion mixed
1 Tbsp mayonnaise
4 slices of multi-grain or similar heart healthy bread – toast lightly
1/2 package of bacon – cooked crisp and drained
4 slices of cheese, sharp cheddar, spicy jack work well but any soft cheese will do.
In a medium bowl, chop the hard boiled eggs. Add the celery and onion mix to eggs, bind with mayonnaise. Put two slices of toast on each plate – break the bacon up (bite size) over each slice. Spread the egg salad mix over the bacon and top with cheese of choice. Place each plate in the microwave and cook at 70% power until the cheese is melted (under two minutes). Serve with fruit slices for a hearty breakfast.
To make a lo-cal and heart healthy version of this recipe, you have several options. Substitute turkey bacon, and use a lo-fat mayonnaise and a lo-fat cheese.
You can use tofu or an egg white substitute (cooked) instead of traditional hard boiled eggs.
