Chilled and Dilled Cucumbers – think Scandinavian roots on this one! This recipe couldn’t be any easier, although it does require a bit of time for the cucumbers to “crisp up”. Served on the side of the Meatball ROM, its a tasty alternative to a green salad as a side dish. 
Ingredients:
2.5 to 3 C cucumbers, thinly sliced
Sour cream or Plain Greek Yogurt
Dill, fresh is best
Salt
Several red onion rings for garnish (*optional)
Five ingredients??? Told you it was simple. Place your thin sliced cucumbers in a bowl. Layer with about a teaspoon of salt – fill the bowl with enough ice water to cover the salted cucumbers. Some folks like to use vinegar instead of salt – use about 2 teaspoon is you substitute vinegar for salt. Place in refrigerator and approximately one hour. Take the cucumber bowl out of the refrigerator – rinse and drain the cucumbers thoroughly. Add enough sour cream (or yogurt) to just cover the cucumbers, season with 1-2 teaspoons of Simply Organic Organic Dill Weed ( 1x.81 OZ) or 1 Tbsp fresh dill weed and mix well. Place back in refrigerator until ready to use. Taste just before serving – you may need to add a pinch of salt. Top with onion and serve.
This side salad pairs well with Fish, too.
