Its Mexican Fiesta Time! Hungry for some great southwestern food? Celebrate my two favorite days in May. The 5th is Cinco de Mayo and the 6th is International No-Diet Day. What a great excuse for a south of the border “pig out”? So here are a few recipes from FoodbyFranz that help us celebrate one of our favorite food styles.
Offer an appetizer of one of the “queso dips” with corn chips or the “scoops” work well at a party. Of course their will be chips and several salsa’s to sample, including my roasted corn salsa and garden salsa with chips. If it is tomato season then a salsa fresca is a must.
For drinks try margaritas or horchata to keep foodies in the mood.
Start with “cream of jalapeno soup”. I know it sounds crazy but the soup is soothing, smooth and not as hot as you would think. The sauce to drizzle in the soup is the key to the heat and cilantro accent. Cream of jalapeno soup is unique and satisfying.
We usually serve buffet style, so folks can load their own plates and come back for seconds. Have a warmer of tortillas available on the table. The buffet items may include:
carne asada,
pork carnitas
open face chicken tamales or
stuffed chicken breasts smothered in mole sauce
A crockpot of pozole is always a good option for winter or fall.
Sides will include southwest veggie mix and my chopped guacamole salad.
If the season is right, grilled corn on the cob with chili powder and lime zest is a must.
