Waldorf Salad

This is a classic salad. Take advantage of all the apple varieties while they are at peak season. If you have access to an apple tree – the taste difference of a tree ripened apple is something you will always remember. This salad can be made with either red (sweeter) or green apples if you like your apple salad a bit zingier!

3 C diced apples
1/2 C celery, chopped
1/2 C walnuts or pecans, chopped
1/2 C grapes, sliced
1/2 tsp lemon zest
dash cardamom
2 tsp lemon juice
1/2 C mayo or plain yogurt
1 tbsp light cream
dash of sugar
Lettuce leaves to line bowl (*option to enhance serving appearance)

Dice celery, nuts, slice grapes – set aside. Dice your apples, place in large bowl and toss with the 2 tsp of lemon juice to prevent discoloration. Add the celery, nuts and grapes to the apples. Mix the mayo or yogurt with the cardamom, lemon zest, light cream and sugar. Fold this into the apple mix. Line your serving bowl with lettuce and pour salad in or omit lettuce and serve. Should serve 6.

One can add some interesting seasonal option’s to this classic:

Crumbled blue cheese
Pomegranate kernels
Tsp of mustard
orange zest and juice instead of lemon
golden raisins
